Low Fat Corn Casserole

Ingredients:

  • Sweet Creamed Corn: 1 can
  • Egg whites: 1/2 cup
  • Sweet Plain corn: 1 can
  • corn muffin mix: 1 small box
  • Fat free Greek yogurt: 16 oz
  • Melted light Butter: 1/4 cup
  • Cooking spray: as needed

Ever heard one of your annoyingly skinny friend say that she simply doesn’t get fat? You see her every day simply enjoying her self by indulging in seemingly fatty food but not even a pound of weight gain on her body. Finally, I just could not take it any more with all the dieting while trying to keep up with the norms of all skinny people around me. I am a foodie at heart so being away from all the taste in the world was just not doing it for me. It had started to affect my health too. I had to look for ways to enjoy the best food while keeping the fat content in check.

Around the same time, I had seen one of my childhood friends get back in shape after having a baby and I complimented her on the quickness with which she did it. So, when she invited me over to a dinner party, I got a chance to ask her about her secret to being so healthy and fit. I must acknowledge the fact that she was so considerate and not at all smug about it. She very happily shared her list of recipes that she had relied upon to get all the pregnancy fat off. She very carefully re did all the classic recipes that she and her family enjoyed in their routine living and in such a way so that the taste was not lost while the fat content was considerably reduced.

One of such recipes is a low fat corn casserole recipe. The thing that really impressed me about this recipe is the amazingly low fat content per serving. I don’t think you can get a better one out there. This corn casserole recipe fits in perfectly with all your home cooked food and does not stand out as the non tasty low fat food on the table. You can still enjoy the tasty good ness of corn with the minimum possible fat gong into your system while you enjoy this yummy dish. This is my favorite corn casserole recipe which turns into a great side dish for any and every event that you might be hosting a party for.

All my worries about having to eat fatty holiday food and then having to shed all of it with double exercise in the gym have been taken care of. Share this at family gatherings or as party food. Trust me it gets good returns. Finally, I only want to say that its time you grabbed your cooking apron and cooked this light and healthy delight for all your loved ones.

The best part of the cooking is that it is not really cooking. I can sum it up in three words for you - tossing, missing and baking.

But let us do it lovingly since we are preparing this as a part of a celebration (at least I am):

  1. First, get your oven ready. Set it to 350 so that in 10 to 15 minutes it will be pre heated for you to place the casserole dish in it.
  2. Then, set aside a baking dish and use the cooking spray on the bottom and sides.
  3. In a large bowl, mix muffin mix, plain sweet corn and the creamy ones. Mix it well.
  4. To this, add the Greek yogurt, light butter and the egg whites. Whisk and stir the whole mixture very gently and thoroughly until you can feel a little fluffiness in the texture.
  5. Spread the mixture into the casserole dish and bake in the oven for 60 minutes. The top should have turned a shiny golden color when you take it out.

Let the dish cool a bit and then cut into pieces and serve. Share this with all of your health conscious friends. I hope you relish it as much as I do every time I make it.
